Lemon Sole, Green Beans and Potatoes

Serves 2

Prep time: 10-12 minutes
Cooking time: 16-20 minutes


2 lemon sole fillets
Handful of chopped almonds
100g of green beans
Flour (for dusting)
80g of butter
350g of new potatoes


Cook the green beans. Toast whole almonds under the grill, until they begin to darken. Cut the beans in half and chop the almonds.

Dust the fillets with flour, then shallow fry in a medium hot frying pan until golden brown.

Boil new potatoes for approx. 15 minutes or until soft.

Remove the fish when cooked and wrap in tin foil to keep warm.

Brown the butter in a pan and add the green beans and almonds.

Serve the fish with green beans, butter and almonds on top and serve with boiled new potatoes on the side.
