As served to HRH The Prince of Wales during his visit of 23rd July 2013.
1 Large cooked brown crab dressed (all the meat picked from the body and claws)
600g potato, peeled, boiled, mashed, cooled
50g fresh herb (dill or coriander or parsley or chives or a mix) chopped quite finely
The juice of 1 lemon & 1 lime
2ml ground sea salt
Mix together all the ingredients, shape into a chosen size.
Flour, egg wash and breadcrumb twice.
Pan fry in 10ml rapeseed oil and 20g butter until golden brown and piping hot.
